Hairy Vetch is one of those wonderful green manure crops that adds nitrogen as well as organic matter to the soil when it's turned under. Plant 1-2 pounds of seed per 1000 square feet in late summer or early fall. Turn it under in the spring before the flowers turn to seeds or you'll have it growing in your garden over the summer months, too!
