I have a butterfly bush that is way way (and I do mean way) overgrown. When should I trim it back?

After your first hard frost you can prune your butterfly bush back. The frost will send it into dormancy and it will not be damaged from the pruning. In the spring it will regrow and flower for you. Best wishes with your plant!
