Pumpkins will turn orange when they are mature. There's not much you can do to hurry things along. Sometimes they will turn orange with the first frost but only if they are mature enough to do so. If you're having problems with underripe pumpkins each year, try growing the smaller varieties and check the back of the package for the days to maturity. Choose the pumpkin types with the shortest days to harvest. Hope this helps!
