Wait until the plants are dormant to do your pruning - after the first heavy frost. Or, you can just leave them alone until early spring and do your pruning then. Knockout roses are reasonably hardy but you may want to spread some mulch over the bare soil beneath the plants to help them through their first winter. Enjoy your landscape!
