When is it best to trim them back?

Since hollies develop berries which persist into the winter months, I'd wait and prune them in the early spring, just as new growth begins. By then most of the berries will have been consumed by wildlife. Lilacs should be pruned immediately after they have finished flowering in the spring. They spend the summer months growing and developing flower buds for the following spring's floral display. Prune them as soon as the flowers are spent so they have all summer developing flower buds. Enjoy your landscape!
