|planted in the spring,bloomed all summer. Something ate the leaves off in one day, leaving the stems. What does this? Waiting for spring.

|I'm guessing, but Japanese beetles can do just what you describe. These pests are difficult to control but next spring try using a neem oil based product such as Rose Defense. It kills Japanese beetles on contact but also has some residual properties to keep new pests from damaging your plants. Better luck next year with your Knockout roses!
