Here's a publication from Michigan State University with lots of line drawings and descriptions to help you prune and train your new trees:

Young trees can be pruned in the winter time when they are dormant, or in the early spring, just as new growth begins. Your trees should not need any special protection this winter. They are all considered winter hardy in your growing region.

Best wishes with your new trees.
