Pruning generally prompts new growth - not something you should encourage this late in the season. So, I'd hold off on cutting your plants back, at least until you know they are dormant. Dormancy begins when the first hard frost of the season signals plants to go into a resting phase. Once this has happened you can prune things down. Or, you can wait until new growth begins in the spring and then prune everything back. Enjoy your garden!
