Am I suppose to cut the wooden type spikes down to several inches on my hydrangea?

After your hydrangea has gone into dormancy you can prune it back. Or, you can wait until early spring and prune them back then. We usually recommend you prune the stems down to about knee high so there will be some stem left for the new growth of the season.
