I still have green onions and mesclun mix growing. I will harvest what I can, but if I cover with plastic will they survive? If I just leave them in the ground will they come up in the spring?

The green onions are more cold hardy than the mesclun mix and if you insulate them from extreme cold they should last for another month or so. Your salad greens are very tender and won't survive temperatures much under 40F so harvest as much as you can while you can. The lettuces are annuals and will not come up again. The green onions probably won't, either, unless they are large enough to develop underground bulbs. I'd harvest as soon as possible and plan on replanting early next spring. Enjoy your harvest!
