I have a couple of rhubarb balls in the ground. If I cover them with grass cuttings will that be good enough to keep them over the winter?

Rather than grass clippings, mulch over the crowns of your rhubarb with pine boughs or pine needles, or straw. Unless the grass clippings are dry and brown they will decompose and radiate heat, which might damage the crowns of your rhubarb. They might also hold too much moisture against the rhubarb crowns, which might cause rot. I'd use straw or pine needles instead of grass clippings.
