As the peppers mature they will naturally turn red. It's time to harvest them. If you leave them on the plant too long they will become mushy. Peppers are annual plants and they will eventually die so harvest the fruits and then pull the plants out of the garden and dispose of them. When you cut the peppers, leave a half inch of stem and store the peppers in the refrigerator until it's time to use them. I'll bet they'll be nice and sweet. Enjoy!
