if we did not takes all leaves off the roses. will they still bloom in the spring.

Your roses will still bloom, but not removing the old leaves might subject your shrubs to overwintering insects and disease pathogens. I'd prune the roses now to remove most of the old leaves - or at least pull off all the old foliage to mimimize pest problems.
