What kind of plant will grow in a windowless bathroom? I get a little west light from the adjacent room if the door is left open

Few plants will actual flourish is poorly lit areas, so you pose a difficult situation. One suggestion might be to grow a variety of plants and move them from one location to another so that you have color and foliage in all areas, but not the same plants in the same places all the time. Most plants will tolerate 2-3 weeks in a poorly lit location without too much harm. By rotating the plants, they will get the environment they require, and still provide you with color in your windowless site. Low-light foliage plants include Aspidistra, Philodendron scandens, Sansevieria, Dracaena fragrans, Dracaena marginata, Fatshedera, Fatsia, Maranta and Tolmiea. Hope one of them appeals to you.
