I planted 2 Christmas palms around Christmas, and I think the cold may have killed them. How long will it take to know for sure if they're not coming back?

Christmas palms are not frost tolerant so the exposed fronds will eventually turn brown and can be pruned from the plant. If the growth bud in the center of the fronds was undamaged, new fronds will appear when the weather warms in the spring. I suspect you'll know by the end of March whether or not the palms survived the frosty weather.
