|It won't hurt your dracaena to trim it down. Choose a place on the main stem where you would like new growth to begin and make a clean cut. The top you cut from the plant can be rooted by dipping the cut end in rooting hormone and sticking it into a pot full of moistened potting soil. Or you can lay the top portion on its side and make lots of new plants by cutting the stem into 4-6 inch long pieces. Dip the bottom end in rooting hormone and set it in a container filled with potting soil. You can root several divisions in the same container. You will know they have rooted when they sprout new growth. Good luck with your project!
