Cilantro is an annual plant that grows quickly from seed, so pick some of the leaves throughout the season to use in the kitchen, and allow the plant to form flowers and seeds late in the season to provide new plants for harvesting next spring. Cilantro has a citrusy-spicy flavor that's great tasting when used fresh as a garnish or ingredient for cooked dishes. Your plants will eventually die, though, so enjoy the leaves while you can!
