We just got over a cold spell and my coconut palms were badly affected. Do I prune them now or wait until the cold snaps stop?

I'd wait a few more weeks just to make sure the frigid weather has passed. Then cut off any dead fronds and hope that your palms will develop healthy new fronds as soon as they recover from the chill. Best wishes with your palms!
