Okra freezes best if you use tender, young pods. Trim off the stems, blanch in boiling water for 2-3 minutes, chill in ice water til they're cold, and package and freeze. If you want them cut, do so after the chilling step. For squash, slice about 1/2" thick, before blanching and chilling.

Cut your turnip greens in 2-3" lengths, blanch in boiling water, a steamer or by stir-frying for 3 minutes. Drain them and run cold water over them, or plunge them in icewater. Enjoy those veggies this winter!
