can you add someting to the pot with a yucca plant to make the blooms change color from the normal lime green to something else?

No, I'm afraid that's the color of the leaves and changing the soil's pH won't change the color of the flowers. Some plants such as hydrangeas are sensitive to soil pH and you can manipulate the color of the blooms, but not so with yuccas. If you want a really bright bloom you might consider planting Kniphofia (red hot poker) in place of your yuccas.
