This spring I planted some F1 shallot seed. Due to weed and water problems they matured undersized ( 17mm ) . I want to replant them this October under 6 inches of mulch. If I dead head the seed stalk will it grow and mature as a regular set planted shallot or ........what ?

Shallots normally develop a stem and seedhead as they grow to maturity. The stem and leaves have a mild garlic-onion flavor that is prized by gourmet chefs. You can harvest the tops at any time. If you leave the foliage alone, it will wither and yellow at the end of the summer, indicating that the bulbs have matured and are ready for harvest. The bulbs will keep for 4-6 months if you allow the outer skin to dry. Use them in cooking or plant in the fall for a spring crop, or in the spring for a late summer crop.
