My finished compost is always wet and clumped, never looks like the crumbly kind. If I put it somewhere to dry out it gets hard and difficult to mix in.

Sounds like you need to mix your compost more often, and/or add more carbon materials. As it heats up, it dries up. Mixing the cool sides into the center and moving the hot center materials towards the outside will keep the pile cooking. If your winter weather is wet, throw a tarp over the top of the pile to keep it from getting soaked. Between the covered top and the regular turning, your compost should come out crumbly, not soggy.
