If you prune now, while the plants are still dormant, you won't have to deal with fluid dripping from the pruned ends of the vines. In the early spring the sap starts to flow and if you prune after it has started, each pruning cut will weep for a few days. It eventually stops, but it can be messy. I'd prune now.
