When is the proper time to plant and harvest Garlic?

Garlic can be planted in the fall so the roots can start to grow before winter weather sets in. In the spring, leaves will begin to grow. If you've planted hard-neck garlic, be sure to keep the flower stem cut down when it appears in the spring. This signals that the bulbs are enlarging and if allowed to remain, the flower will sap energy from the bulb and result in smaller cloves at harvest time. Harvest garlic in the late summer or early fall, after the leaves begin to turn brown.
