I have two apple trees and a peach tree. All of them are very young. What is the best fertilizer to use on them, and when should I apply it?

If growth is slow or leaf color is pale you can use a time release 5-10-10, broadcasting it beneath the canopy of the tree, or you can use fruit tree fertilizer spikes. If your trees are healthy and growing well, you won't have to feed them at all. They are getting the nutrients they need directly from the soil.
