Hornworms are the larvae of a night flying moth so its often difficult to see them lay their eggs. The larvae are easy to spot, though, and you can pick them off your plants or you can dust or spray your plants with Bt (Dipel or Thuricide). Bt targets only caterpillars and won't harm pollinating insects.
