While technically you can dry Kentucky Wonders, you'd be disappointed in the taste and quality of the resulting product. Most of the flavor from these beans comes from the pod. The beans themselves aren't bred to develop the hard outer shell or the meaty insides that you'll find with shelling-type beans. If you tried to cook dried Kentucky Wonders, you'd likely end up with a pulpy mess! If you have Kentucky Wonders that are overmature, with beans bulging in the pod and with pods turning tan in color, you can harvest and save the beans for planting next year. Store them in an airtight container in a cool, dark location until next spring. Then plant at two-week intervals to keep the beans ripening throughout the season rather than all at once. That way you'll be able to keep up with the harvest and not have to deal with overmature green beans. |
