I use large containers to decorate. What can I use to take up some of the space and not use as much soil?

You can place empty milk cartons in the bottoms of large containers. Be sure to keep the lids on the cartons. Or you can place styrofoam packing peanuts into plastic bags and set them in the bottoms of your containers. As long as the peanuts are in plastic bags they won't float and won't surface through the potting soil.
