Wild turkeys regularly scratch out all the bark from my gardens onto the lawn. What do you recommend to get rid of them?

There's really nothing you can do to discourge wild turkeys other than to fence off your gardens. Turkeys, like chickens, love to scratch in their search for insects. The good news is that they are probably performing bug control in your garden. The bad news is that they make a mess. Chicken wire fencing will make a good barrier to your gardens. Wish I had another solution for you.
