I just dug my parsnips. They are delicious, but ugly...not one long carrot-like root, but either fat and bulblike or a root with many smaller side roots. These are side by side some

Misshapen parsnips generally result from soil conditions, such as clumps of organic amendments, stones or roots beneath the surface that interfere with growth. As you've discovered, they are still tasty and the misshapen ones can always be cut into pieces and used in soups or stews. Enjoy your veggies!
