|I get about 2 1/2 to 3 gallons of water every day from the A/C unit. Does this condensation contain any freon or anything else that might injure us we use it to water tomatoes, peas, herbs etc. that will be consumed?

|The condensation is simply the moisture that has been extracted from the indoor air. You can safely use the water on your outdoor plants. It contains no freon or anything else from the A/C unit.
