I have very large gardenias in the front of my house.. Well the one in the middle died, from white mites! What can I plant there now so that it doesn't look horrible? And how do I know the soil is good?

I'd plant another gardenia in its place. Mite like dry, dusty places so if you hose off your gardenias periodically throughout the summer months, you'll discourage mites. To improve the soil, work in some compost or other organic matter prior to planting your new shrub. Enjoy your garden!
