I don't know what kind of pest I have but they are eating at all my new seedlings down to just the stem is left...I don't like regular pesticideswhat can I do?

How annoying! It's difficult to recommend a pesticide when we don't know what might be doing the damage, and since you don't want to use pesticides anyway, the best advice is to place a barrier between your plants and the culprit. You can use floating row covers (Remay is one brand) until your plants are large enough to fend for themselves. Best wishes with your seedlings!
