If they are planted too early what do you cover them with at night to protect from frost?

If frost is predicted you can cover over them with floating row cover (available at garden centers), or drive a few stakes in the ground and drape an old sheet over the plants. Keep the covering a few inches above the tops of the plants and remove the covering before the sun shines. If you leave the cover on in direct sun the plants can bake.
