|Maples should be pruned while they are dormant so late winter is the best time. If you prune after the leaves have emerged, you'll end up with lots of rank growth. You can prune the canopy into a lollipop shape by pruning all the branches to the same length. New growth will be forced to grow behind the pruning cuts which will provide a dense, full canopy. Annual pruning for several years will help the canopy fill in. Best wishes with your project!
