The vinca major I planted is turning yellow and blotchy somewhat. Is this because I watered them too much or something else?

Too much water can certainly cause yellowing leaves but so can a need for fertilizer. I'd water throughly then wait 3-4 days to check the soil moisture. Stick your finger down into the soil. If it feels moist about an inch beneath the soil surface you won't need to water for another few days. If it feels dry, go ahead and water. For quick results, feed with an acidified liquid fertilizer (Miracle Gro or Miracid). This should help your vinca green up quickly. Best wishes with your garden.
