To perform best, rhubarb needs a long, cool spring and rich soil. While you can harvest some of the stalks the first year, you should leave most of them alone so they can help the roots grow strong and healthy. The larger your rhubarb plant, the more stalks you can harvest in years to come. Rhubarb should get morning sun and filtered shade in your Florida garden. Hot summer sun can cause the plants to wilt. Choose a spot in your landscape that gets morning sunshine and amend the soil with lots of compost or other organic matter. Plant your rhubarb and water it well, then water regularly throughout the growing season to keep the soil moist but not soggy wet. Enjoy your rhubarb!
