|Peach trees should always be pruned in mid- to late February, before trees leaf out. While you can prune now, you'll run the risk of reducing the fruit crop since your tree has already flowered. I'd wait until this winter and then prune it back. You can prune to shape and reduce the size by about a third without harming the tree. Best wishes with your peach trees.
