if you're not supposed to use pressure treated wood for a veggie bed, what type of wood should I use?

You can use woods with built-in anti-rot properties such as redwood, cedar or cypress. If you use softer wood (pine or fir) you can help preserve it by applying linseed oil. It's a natural preservative - but it takes quite a long time to dry so don't plant right away. Best wishes with your new garden.
