I plant one of each of the following plants: watermelon, zucchini squash, cantaloupe, poblano peppers, red peppers; rome tomato, tomatillo, cucumber, walla walla onion and jalapeno. Should I have planted more than one of each to ensure production, and if so is it to late to extend my garden.

One of each plant is just fine. Insects (bees and wasps, mostly) will visit each open flower on each plant and transfer pollen. Each flower that is pollinated will develop into a vegetable or fruit. Hope you have a great harvest!
