Bitterness in cucumbers is part genetic and part due to the weather. Choose non bitter hybrid varieties such as 'Sweet Slice' and 'Salad Bush' to start with. Then keep them growing well and watered consistently throughout the growing season. Mulch the beds with hay or straw to conserve moisture and that should keep them tasting sweet.
