mine died and I pulled it up and it had a milky white stuff under it what is this and how can I prevent this from happing again?

Sounds like the bulb rotted and it was most likely due to overwatering or poorly draining soils. You can try again with a new bulb. Be sure to mix some compost or other organic matter into the soil prior to planting to help the soil drain a little better. Best wishes with our elephant's ear.
