My beautiful green onions have bulbs at the ends now. Are those seeds? What should I do with them?

Sounds like your onions have bolted. The flower stalks that emerge from the center of the plant should be cut off as soon as you notice they are growing. If you don't cut it off, the stalk will flower and then produce seeds. However, the energy it takes to flower and set seeds will come from the bulb. So, if you allow the flower stalks to grow, you won't have any bulbs to harvest. If the flowers have already opened, just let them develop seeds. Collect the seeds and plant them in your garden and you'll end up with a new crops of onions.
