When the flower is spent you can snap it off the flower stem. Sometimes you'll get two or three more flowers. When all the flowers are dead and no new flowers develop you can cut down the flower stems, all the way down to where it emerges from the plant. The green leaves will remain all summer long and next spring your irises will bloom again.
