How do I determine the amount of cubic feet of soil I need for a raised garden measuring 8 feet, by 6 feet, by 6 inches?

You have 48 square feet (6X8=48) and will need 0.89 cubic feet of topsoil. One caution here - not many plants will grow in only 6 inches of soil. 12 inches is better so if you can increase the depth of the raised bed, you'll be able to grow most annuals, perennials and small shrubs. If you do this, you'll need 1.78 cubic yards of topsoil.
