How do we plan size/space needed for a veg garden....lettuce,sweet peppers,pole beans,cukes?

You'll want to find the sunniest site possible for your veggie garden and then choose the vegetables that you and your family most enjoy. Start out small and as you gain experience you can enlarge your garden. A 10' by 10' garden is usually ample for a family of four. Each plant you mention will need about 1 square foot of growth room so space accordingly. Be sure to plant the tallest plants in the back or in the middle of the bed so they don't shade your other veggies. Cornell University has a terrific publication on vegetable gardening.
