My tomato plants this year have grown extremely tall and have outgrown the cages. is there a way to pinch or top them off so the growth goes into the fruit and not the height ?

You can pinch out the tops of your plants. They will respond by sending out two or more new stems below the place where you pinched them. Just keep pinching out the new growth and you'll be able to keep them at the size you want. When you pinch to control growth, though, no new blossoms or fruit will be produced (tomatoes flower on new growth). With that in mind, go ahead an pinch your plants back. Enjoy your harvest!
