something is eating my red cabbabe leaves, and my brussels leaves. I've looked at all times of day and night, and can't see the culprit, what do I probably have, and how do it stop it, and still be able to eat the vegies?

I'm betting the cabbage worm is at fault! The best defense against caterpillars is Bt (bacillus thuringensis) which is sold as Dipel or Thuricide. It targets only caterpillars and is registered for use on vegetable plants. Be sure to apply according to label directions.
