Both plants develop flowers on new growth so pruning in early spring is best. After they have finished flowering you can prune them again. Your gardenia will flower several times during the summer so you can prune it back several times, but your hydrangea will only develop flowers once so don't prune it back until after the flowers are faded. Enjoy your garden!
