Good day, do I just dead head these when they are through blooming or should i cut them down further toward soil line? Also, if I shake the tops of the dead blooms over and area of prepared soil, will they bloom next spring and grow throughout this winter?

Both plants will continue to produce new flowers all summer long, especially if your remove the spent flowers. At the end of the summer or early fall you can allow the last of the flowers to develop seeds. When the seedheads are mature they will turn a tannish brown. At that time you can either collect the seeds to store and plant next year or you can cut off the seed heads and shake them over a prepared bed. They will sprout next spring.
